Ingredients:
- 3 teaspoons egg white
- 2 oz Blended Aged Rum ❸
- ¾ oz lime juice
- ¼ oz SC demerara syrup
- ½ oz Small Hand Foods raspberry gum syrup
- 1 dash Angostura bitters
Glassware: Chilled coupe

Method
Combine the egg white and rum in a drink mixer tin and dry flash without ice for 10 seconds. Transfer contents to a cocktail shaker and add the remaining ingredients except bitters, then shake with cracked or cubed ice. Double-strain into a chilled coupe. Float the dash of bitters as garnish.
