Ingredients:
- 2 slices cucumber
- 1½ oz sherry
- 1½ oz pineapple juice
- ½ oz lime juice
- ¼ oz simple syrup
- 5 drops sesame oil
- 1 pinch salt
Garnish: pineapple frond, dehydrated lime
Glassware: Collins

Method
Muddle cucumbers in a shaker, add remaining ingredients, 12 oz crushed ice, and shake for 20 seconds. Strain into a collins or highball, add more crushed ice. Garnish with fronds and lime.

This drink tastes more like a trip to a sushi restaurant. Cucumber and savory sesame notes (I used roasted sesame oil) along with a secondary fermented note from the sherry. A little bit like having an ice-cold miso soup before you dig into your rainbow roll. Interesting at the very least!
