Ingredients:
- 8-10 sage leaves
- ¾ oz lemon juice
- ¾ oz peach liqueur
- ½ oz Oloroso sherry
- 2 oz cognac
- 2 dashes bitters
- 1 egg white
Garnish: sage leaves, peach wedge
Glassware: Chilled coupe

Method
Combine all ingredients in a shaker and dry shake. Add one large ice cube plus a cheater cube, and shake hard. Double strain into a chilled coupe, let the foam stabilize for a moment, then lay a thin slice of peach and a sage leaf on the foam as garnish.
