Ingredients:
- 2 whole strawberries
- 1 oz simple syrup
- 2 oz lemon juice
- 2 oz seltzer
- 3 oz Empress 1908 gin
Garnish: whole strawberry

Method
Add strawberries to a shaker and muddle thoroughly. Add remaining ingredients, leaving gin aside. Add 12 oz crushed ice and shake for 20 seconds. Strain into a glass with fresh ice. Using a barspoon, float the Empress 1908 gin. Spear a strawberry and set atop as garnish.
