Method

Combine tepache de piña and Campari in a glass and stir to combine. With a basting brush, gently brush an inner side of the glass with the red syrupy mixture. Place one large long clear ice cube in the glass.

Combine remaining ingredients in a shaker with ice and shake. Strain into glass and garnish with pineapple fronds.

This drink comes from the Summer 2022 menu of Collage cocktail bar in Barcelona, Spain. The ingredient amounts are a best estimate based on recreating the drink at home. The recipe called for Savanna Rhum HERR 57 by name, but the bottle pictured, Le Galion Grand Arôme, is remarkably similar in specs, particularly that it's molasses column still with a similar high ester count.
