Method

Strip/core pineapple and slice into 3/4 inch patties and grill on barbecue or over wood fire. Chop into chunks and add to saucepan and coat thoroughly with sugar. Cover and let sit for 6-7 hours. You should notice a pool of syrup building at the bottom of the saucepan. Heat Pan to simmer (do not boil!!) and stir to make sure all sugar is dissolved. Filter and store in fridge.
